Can I use the highest temperature for manual cooking?

No, for reasons of safety this is not possible. The highest temperature is blocked from manual use on the TM6. It is ONLY available as part of the automatic modes in Guided Cooking recipes. The highest temperature for manual cooking is Varoma mode.
